For reasons that I'd rather not get into... I REALLY needed some carbs this week. What can I say, I am an emotional eater.
I love making this recipe. It's light, full of flavor plus good-for-you broccoli and shrimp! Kaboomski.
WHAT YOU NEED:
1/3 cup olive oil
4 teaspoons olive oil
2 Tablespoons lemon juice
2 pounds of jumbo, cooked and peeled shrimp
2 teaspoons red pepper flakes (or less depending how much heat you like)
8 oz penne noodles (I have also used fettucine before too)
White wine, to taste
Shredded parmesan cheese for topping
WHAT YOU DO:
Mix together olive oil, garlic, lemon juice in a large bowl. Add shrimp and toss. Put bowl in fridge for 15 minutes to marinate.
Cook pasta per instructions
Saute shrimp and marinade in large saute pan over medium-high heat, adding broccoli and red pepper flakes. Cook for 5 minutes, stirring. Pour a swirl of white wine and cook for an addition 5 minutes.
I like to pour the whole saute pan of shrimp yumminess in with the pasta to coat it, toss and enjoy!! :)
